Food not to pass over…

I’m not knocking gefilte fish, but that’s not our jam here; this is Passover, Bombay-Baghdadi style.

Mahashas–baked tomatoes and layers of onion skins stuffed with a minty ginger rice.

The Jews of Bagdad, Iraq spread out over the last century and many landed in Bombay, India (now Mumbai). This wandering begot a type of Jewish festival food that is rooted in Indian and Arabic flavors and techniques.

Bamya–Arabic for okra. This traditional dish is okra stewed in tomatoes, lemon juice, fresh ginger and spices.

Labor intensive and deep, the cuisine, when you get it right, is unbelievably tasty. Happy Passover to all who celebrate this holiday that is essentially about freedom–even if you do eat gefilte fish!
